A griddle or a large cast iron or other heavy bottomed pan

You want to toast the tortillas, so you won't be using any oil
in this recipe. Use a griddle or pan that is either non-stick
or is well-seasoned.
Well-seasoned means the pan has had food sautéed or fried in
it before and while it has been cleaned it still has a slight
bit of oil clinging to its surface.
If you don't have a pan or griddle like that, you can use a
little cooking spray or you can put a little oil on a paper towel
and rub it lightly on the surface of the pan.
Heat the griddle over medium heat.
Place a tortilla on the griddle. Heat one side until the
tortilla gets a little brown, then flip it over.
Arrange the shredded cheese on the tortilla. Don't put too
much or the cheese will ooze out when you fold the tortilla
in half.
When the cheese begins to melt, slide your spatula under
one side of the tortilla and gently fold it in half. Take the
spatula and gently flatten the tortilla so that the cheese on
both halves sticks together. Your tortilla and cheese have become
a quesadilla!
Take the quesadilla off the heat and put it on a cutting board.
The cheese inside is very hot so have an adult cut the quesadilla
into wedges.
Transfer the wedges to a plate. You can eat the quesadilla
as it is or you can put a little salsa on it.
If you want to try something different add chicken, sliced
olives, chopped green onions, tomatoes or whatever you like
to your quesadilla right after you¹ve put the cheese on the
tortilla.
If you add other fillings, it's best to put them only on one
half of the tortilla and make sure you fold the cheese only half
on top. This will keep the other ingredients from falling out
as you try to fold the tortilla.
