Veggie Taco
You'll need:
- Corn tortilla
- A can of vegetarian refried beans
- Shredded lettuce
- Chopped tomatoes
- Chopped white onion
- Avocado slices
- Shredded cheese
- Salsa
- Plain yogurt
- Get all your ingredients ready in advance because basically we¹re going to be assembling the tacos quickly.
- Remove the refried beans from the can, put them in a bowl, place a saucer or a plate to cover the bowl and heat them in the microwave for a minute or two. Leave the cover on the bowl to keep the beans warm.
- Dampen a clean dishtowel. Spread the dishtowel out in a microwave-safe bowl, leaving the ends flopped over the sides.
- Place a few tortillas into the bowl and pull the ends of the towel up to cover the tortillas.
- Heat the bowl with the tortillas in the microwave for about 30 seconds. You want to steam the tortillas.
- Carefully open the towel. The steam coming out can be very hot. Lay the tortilla out on a plate.
- Spread bean down the middle of each tortilla.
- Working quickly, add the lettuce, avocado, tomatoes, onion. Fold the tortilla in half.
- Now top with cheese and salsa. Put a dab of yogurt on top.
