Spread a thin layer of chocolate on half the wafers and let
the chocolate cool. We put a little too much on ours and we
couldn't taste the vanilla wafers.
Put the 12 chocolate covered wafers into one plastic sandwich
bag and the plain ones into another bag.
When getting ready to go, place the bananas where they won't
get squished - like at the very top of the picnic basket or
shopping bag.
When you get to the picnic, peel the bananas and slice them
into 1-inch chunks. You can use a plastic knife for this job.
Take a chocolate covered vanilla wafer and put the banana
chunk on it.
Dab a little peanut butter on the other wafer and put on top
of the banana.
Gently squeeze the two wafers together until the banana smooshes
out of the sides and looks like an ice cream sandwich.
Note: We found that the peanut butter made the banana very slippery
and sometimes the cookies got crushed. So if you use peanut butter
you might want to put thinner slices of banana and skip the squeezing
the two cookies together.
