Ask your auntie or whoever is helping you to please cut the
lemons in half. Take each half-lemon and put it cut-side down
on the citrus juicer. You'll need to push down slightly while
give the lemon-half a hard twist to squeeze the juice out of
the lemons. If you need help, ask your adult helper and remember
the magic "P" word.
Next measure the olive oil, garlic and oregano and mix them
into the juice. Set that mixture aside.
Arrange the chicken in the pan. Try to lay them flat on the
bottom. Mom cut the chicken breast in half again so there would
be 4 child-size portions.
Then, nestle the potato slices in between the pieces of chicken.
Pour the lemon juice mixture over the chicken and potatoes.
Put the baking pan into the oven for about 30 minutes.
This next part is absolutely an adult job - because the pan
will be very hot! Using a bulb baster, ask your adult helper
to baste the chicken and potatoes. That means they should squeeze
the baster's bulb and suck up some of the juice from the bottom
of the pan. As they release the bulb a little at a time, the
lemony mixture will flow out over the chicken and potatoes.
Baste the chicken and potatoes again in about 10 minutes.
Repeat until the potatoes are golden and the chicken is cooked
through. Your auntie or your adult helper can tell when the
chicken is done by poking the tip of a knife into the thickest
piece of chicken. If the juice coming out is clear, the chicken
is done.
Makes enough for 2 adults and 2 children with enough leftovers
for both kids.
