Green Eggs and Ham
We heard that you could dye the yellows of the egg with food coloring but we thought we would try a more natural idea.
You'll need:
- 5 egg whites
- 2 cups of loosely packed fresh spinach
- 3 tablespoons of olive oil
- 1/2 cup of thinly sliced onion
- 2 cloves of garlic - diced
- 1 cup of ham cubes
- 1 cup of broccoli flowerettes - steamed
- 1/2 cup of Parmesan cheese - grated
- Chives for garnish
- A little help from an adult
Equipment:
Measuring spoons and cups A blender- A spatula
- A non-stick fry pan
A little adult help
- Separate the whites from the yokes of 5 eggs.
Put only the whites into the blender jar.- Add half the fresh spinach to the jar and press it down with the spatula.
Put the lid on the blender and make sure it is tight.- Turn the blender on to the "chop" setting. The blender should chop the spinach into tiny bits, turning the eggs green.
- Turn the blender off. Put the second half of the spinach into the jar and use the spatula to press it down.
- Put the lid back on the blender and turn the blender on to chop again.
- Turn the blender off again. Make sure the blades inside have stopped.
- Use the spatula to push down any large pieces of spinach that have stuck to the sides of the blender jar and not gotten chopped.
- Put the top back on the blender and give it one more chance to chop the last of the spinach. Now your eggs are totally green.
- Pour the olive oil into the fry pan and turn the heat on to medium.
When the oil begins to get a haze on it, add the onions and the garlic. Sauté them until the onions begin to get transparent.- Add the ham to the onions and heat it for about 5 minutes. Stir the ham and onions so they don't stick.
Next, pour the egg and spinach mixture over the ham and onions. Let it cook for a couple of minutes, then give it a stir. Add the broccoli flowerettes and stir the eggs again.- When the eggs are almost completely solid, sprinkle the Parmasan cheese over everything and stir once more.
Turn the heat off under the eggs.- Sprinkle the chives over the top of the eggs.
Use your spatula to transfer the eggs to a plate.
