Lil' Chick Cupcake

These adorable little chicks make a perfect hostess gift if you're invited to someone's house for Easter.

They are also fun to make as treats to take to school or just a happy spring gift for the mail delivery person or anyone who you think has had a hard winter and would like to celebrate the return of Spring.

Makes 12 cupcakes

You'll need:

  • 12 cupcakes - we used carrot cake ones
  • 1 cream cheese icing recipe
  • 2 cups of shredded sweetened coconut
  • Yellow food coloring
  • 12 large marshmallows
  • 12 beaky-looking bits of carrot or pine nuts
  • 24 currants
  • A little adult help

Equipment:

  • A gallon-size plastic zipper bag
  • A butter knife
  • A large bowl
  • A large spoon
  • A plate
  • A serving plate
  1. Put the coconut into the bag and add 10 drops of food coloring. Shake the bag until all the coconut is dyed yellow. If you want the "feathers" to be darker yellow add 4 more drops of color at a time until you get the color you like.
  2. Add 4 drops of food color to the icing. Mix. If you want a darker color add the color 2 drops at a time.
  3. Spread icing on one cupcake and on the sides and top of one marshmallow. The marshmallow can be a little tricky. Ask for help if you need it and remember the "P" word.
  4. The marshmallow should be placed over to one side of the top so you have the "chick's" head and back.
  5. Place the cupcake on the plate and sprinkle coconut on it until it is covered with what looks like downy feathers.
  6. Add two currants for eyes and a carrot piece for the beak.
  7. Arrange on a serving plate. Ta Dah! Lil' chicks to brighten the day.
