Really Simple Baked Chicken
Today we're cooking with the winner of the Spatulatta Cookbook
Contest.
When Brandon filled out his entry form he said his favorite
ingredient was chicken.
Well, Brandon we've got 5 chicken recipes just for you. We're
going to start with a really simple baked chicken and then show
you what we can do with the left-overs in the other 4 recipes.
You'll need:
- 1 roasting chicken
- 2 carrots - cut in 1 inch chunks
- 4 medium sized potatoes - cut in quarters
- Sea salt
- Pepper
- A little adult help
Equipment:
- A roasting pan with lid or aluminum foil to cover
- A sharp knife
- Paper towels
- A serving plate
- Heat the oven to 375 degrees F.
- Remove the chicken from the packaging and check for hidden
packets of giblets. Treasure hunt!
- Rinse the chicken under cold water. Shake it over the sink
to make sure the water all comes out.
- Pat it dry with paper towels. It's a chicken beauty treatment.
- Put the chicken in the pan.
- Arrange the veggies around it.
- Sprinkle on salt and pepper. We like to use Hawaiian salt.
Check out the Black

the crystals give the salt unique flavor.
- Cover the pan with a lid or foil.
- Into the oven it goes.
- Set the timer for 1 hour. After an hour, uncover and cook
until golden brown (another 30 minutes or so).
- Ask mom to insert a knife half-way into the breast meat to
make sure the juices run clear.
- Enjoy!
